cuisine
Three meals per day, as well as an afternoon snack, are included in your stay. Meals are chef’s choice, however we can accommodate any dietary restrictions or allergies, and are very proficient in cooking for restrictive diets.
We’re passionate about food and strive to give you the best culinary experience. We serve predominantly plant-based cuisine with the addition of locally caught fresh fish that is brought right to our dock every evening. We offer a wide variety of cuisine from traditional Panamanian dishes to global influences.
Communal Dining
Breakfast, lunch, and dinner are served at communal tables with all of our guests. The afternoon snack is brought out directly to wherever you happen to be at the time. A large table on the dock provides many opportunities for meals to be enjoyed under the stars while watching sting rays glide past beneath you.
Green Eats
With a focus on whole foods, we buy local and organic whenever possible, and are constantly looking for new ways to reduce the waste and carbon footprint of our kitchen. We are gradually moving towards a more plant-based menu, and make our own coconut milk, nut butters, and fruit juices in house. All the fish we serve is caught in the waters right outside the property. In an effort to minimize packaging waste as much as possible, most of our dry food is bought in large sacks.

Beverages
We have a full bar and all day dock-service. We offer craft cocktails, well and premium liquors, classic Panamanian beers, and a variety of refreshing non alcoholic drinks such as fresh smoothies, juices, and sodas. Additionally, we serve a collection of organic wines from Emiliana Vineyards. Each wine is cultivated using bio-dynamic practices that respect and preserve the natural balance of life.
Foodprint
We like to know where our food comes from, as it impacts not only our health, but also the environment, animals, and other people. Below is a growing list of locally-sourced items you’ll find in our kitchen.
Coconuts are plucked directly from our trees for use in everything from piña coladas to our homemade granola.
Coconut oil is made by some lovely ladies in the Salt Creek community.
Cacao also comes from the local village.
Sustainable seafood is caught in the waters surrounding the property.
Organic limes are grown on Bluff Beach just a short boat ride away.
Chocolate is sourced from Green Acres Chocolate Farm in Dolphin Bay.
Organic greens come straight from Kakao Culture Organics in Boquete.
Finca-Panda Coffee is grown in the highlands of Boquete.
Our organic wine comes from Emiliana Vineyards in Chile, the wine region closest to Panama.
